Maple Breakfast Sausage
You should make your own breakfast sausage, it’s really easy and really delicious. I’ve been making at home sausage McMuffins (with these English Muffins) for a couple months now because there is literally nothing dairy free on the McDonald’s menu (not even the fries), and not being able to eat dairy or eggs severely limits my breakfast options. It takes longer to chop the ingredients than to make the sausage and it can be made ahead on a Sunday to get you through the week. This sausage would also be great in a sausage gravy for biscuits.
Maple Breakfast Sausage
1lb ground pork
1tbsp finely chopped sage
1tbsp finely chopped thyme
1tbsp finely chopped oregano
1 ½ tsp kosher salt
½ tsp red pepper flakes
2 cloves of garlic, minced
1 tbsp maple syrup
½ tsp fresh ground black pepper
Mix all the ingredients together in a bowl with a fork until well blended
Heat a skillet over medium low heat
Scoop about a golf ball sized portion (all in all there should be about 8) and roll into a ball, then flatten into a patty
Cook for 3-4 minutes on each side, until the patties are cooked through and both sides are equally browned.
